This is similar to the broccolini and tempeh I just made because I had the same things on hand. But there are differences in proportions as well, plus some other changes (toasted sesame oil, for example).

I couldn't get any bread today so I just put some chia pudding together for breakfast. There are strawberries so breakfast is sorted!

(l'm fussy, but figure if I am paying $7-$8 a loaf then it needs to be bread I like! GF ugh)

@AnnonBudgie FWIW, I have a chia pudding (along with three pieces of fruit — currently, apple, plum, tangerine) for breakfast every morning, along with a pint mug of tea or coffee (coffee on Wednesday and the weekend).

It is, though, an enhanced chia pudding.

The best foods to feed your gut microbiome

A whole-food plant-based diet is clearly, rhe best. Animal-based foods have zero fiber, and refined foods (sugar, flour, fruit juice, etc.) are generally made by removing fiber. Highly-processed (or ultra-processed) foods also generally lack fiber but do include questionable additives.

📝 Recent research from the Harvard T.H. Chan School of Public Health links the 2021 Child Tax Credit expansion to significant improvements in adult mental health.

Among the lowest-income adults, anxiety symptoms improved by more than 13% and depressive symptoms improved by more than 9%, finds a study by Akansha Batra, Kaitlyn Jackson, and Rita Hamad.

At 80 hours of fermentation, I called a halt and harvested the slab — the rather thick slat, which clocked in at 1457g (3 lb 3 oz).

I left it in the incubator last night with the heating mat turned off and the lid ajar, so it was somewhat insulated, though not fully.

It was warm this morning, and I moved it to a raised rack on the table to finish. I'm going to let it go for another 8 hours. The slab is now quite firm, but I like as much mycelium growth as I can get.

The latest batch of chickpea and barley tempeh at 49 hours. I meant to take a picture at 48 hours, but forgot. When I got up this morning, the tempeh didn't seem to have progressed much (temperature 70ºF in the room), so I returned it to the incubator (with no heat, just the insulated enclosed space). That helped. Just now the tempeh was quite warm with tiny traces of spring, so it's back out on the table.
