Festive Food Folklore - Day 20

On St Thomas’s Eve in Austria, unmarried ladies would slice an apple in two to foresee their wedding. If there was an even number of pips, she would marry soon, an odd number meant a wait, if she’d cut through one of the pips she would have a more troubled life and end up a widow.

I was planning to do this tomorrow but I've got to go to the post office, the Polish deli & Aldi in the morning so I'll start now. Are you planning a special meal to celebrate the Solstice? If so would you like to share your menu? I thought it might be a little light in the darkness, & a little balm to our souls, to bond over delicious food. In case you are interested we are having a dumpling of three nations extravaganza with dips to match. What about you?

Excellent story covering some of the food politics in Indian universities https://www.theswaddle.com/hungry-for-education

Tung ho and tempeh

I made a mess of greens — tung ho (chrysanthemum) — and I learned that tung hot should be cooked with a couple of days of getting it and that it should be cooked a very short time (or eaten raw) — in this case, add it at the end, and cook only a few minutes.

Good to have the fruit bowl full again. I eat 3 pieces of fruit a day, and this coming week it will be a tangerine, an apple, and a pear. Persimmons are over, it looks like, so it's pears until plums and peaches come around.

It seems as if one of the fruits must than an initial "p." 🙂

For Christmas, I received an indoor planter. I'm already planning the first crops. I got a packet of regular seeds, but also have ordered seeds for:

Red Shiso
Green Shiso
Rosemary
Dark Purple Opal Basil
Garlic Chives

With my Spice & Nut Grinder, I will make fresh, 1-meal portions of pesto-ish sauce, like:

Purple Pesto – Purple basil, garlic chives, extra-virgin olive oil, some walnuts, and a pinch of salt; grind, use. 🙂

Good instant ramen rivals fancy ramen restaurants in the U.S.: it’s not rocket science, you can already buy the instant noodle version of top rated ramen restaurants in Tokyo!

Sun Noodles, which makes the noodles for most top U.S. ramen restaurants, has these excellent packets like this very good tsukemen I’m having: https://www.sayweee.com/en/product/Sun-Noodle-Tsukemen-Seafood-Tonkotsu-Dipping-Ramen--Frozen--1-Serving-/31682?referral_id=4972487&lang=en&utm_source=copyLink

Learn to make chashu and a ramen egg and no more spending $30 at a not so good fancy restaurant (there aren’t many in SF that I rate highly)

I’m interested in , but not with ultra processed substitutions. I refer to this as but that doesn’t seem to be an active tag here.

Any ideas what I can follow to tap into this type of ? Boost are appreciated.

My latest letter is out! If you would like to hear about building festive traditions and rituals with food, the importance of celebrating at midwinter in your own way without detracting from the beliefs of those that celebrate differently, and for those that are not celebrating: a recipe for a completely none festive food which can still lift your spirit on a bad day. Black sorghum findings.

It helped to soak the (intact, whole) grain for a few hours before cooking.

I started with 1 cup of grain, soaked it, drained it, added 2.5 cups water, and simmered covered until all water was absorbed. It's good, though next time I think I'll try 3 cups water.

I'm having some with perilla oil, TJ's Sriracha Seasoning, and smoked paprika. I'll probably use it like rice.

Soybean + Purple Barley Tempeh

It's close to done. Photo below shows it at 73 hours, but I'll let it go for a few more hours. The temperature toward the center, measured with an infrared thermometer, is 97.4fºF / 36.3ºC.

You can see an image compare with a slider at the bottom of this post:

At the bottom of this post on the blog is a slider to allow easy comparison of the batch at 24 hours vs. the batch at 48 hours.

As noted in the post, I will got at least another 24 hours and probably 30 hours to get as much mycelium growth as possible.

It's still being incubated, though I'm about to turn off the warming map and open the lid a little. But the fungus has really established itself now.

I am always fascinated to watch the progress of its growth.

Swingle citrumelo

Traded homemade muffins for a bunch of these fruit. It’s a hybrid between trifoliate orange and Duncan grapefruit and can be used as a lemon substitute - it supposedly can grow in zone 7 so might be more convenient for northern growers rather than bring a 🍋 tree indoors.

Watered and sweetened to lemonade, you can definitely taste hints of grapefruit.
