You could ssh to your clevo from your thinkpad, or get a bluetooth keyboard, the keychron or royal kludge are great and can be had for under a 100, or you could desolder the keys on the clevo and replace them with scissor switches like in this article tomshardware.com/…/kailh-laptop-switches-scissor-…

I tried disabling the net interfaces in device manager but windows just re-enables them and send god only knows what back to their servers. I don’t like relying on disconnecting the ethernet cable...

I don’t know what linux you have but you don’t windows here’s an easy step by step with unetbootin. It doesn’t need to be ubuntu even though the guide says.
Reread that ventoy article. Also all USB drives are UEFI compatible. UEFI just reads the boot medium. I’ve made many a bootable Windows USB with Ventoy you can even skip the TPM check on Windows 11
