Sooooo good.

«Croustillant pollen de fleurs, pain de gène pistache, mousse nougat» (flower pollen crunch, pistachio financier, nougat mousse). From Pascal Pochon, one of the best pâtissiers in France.

Normally I prefer making a steak in a cast iron, but this one turned out pretty damn good on the BBQ anyway. Sorry, I don’t have a pic of the inside.

We try to make food from all countries, drawing randomly each time. This was Fiji.

Bust out the bagel’s boys

Bean and cheese tacos - homemade refried beans, queso fresco, smoke tometillo salsa, quick pickled onions and jalapenos.

Our property is covered with wild raspberry, will black raspberry, and wild blackberry cane. I picked these this morning. I got about 500 ml (2 c) of berries. I’ve tinned them and will freeze them until I can pick more over the next few days. Then…I’ll make black raspberry jam!...

Had a friend in town and decided to make BBQ short notice. The only thing I could think of to smoke in our timeframe was ribs—but I also noticed that our local store had started carrying Cupie Mayo and Furikake. In an attempt to use it I came up with this ad hoc dish. Did a rapid marinade of baby backs in bourbon barrel aged...

Bacon got REALLY expensive the year before I left the chef life for the wide world of food sales. I ended up running this as a special on the bars but it’s become a staple for me whenever I get the craving....
