Civilization 6 has dynamic themes for each civilization - as you progress forward in time and technology, the backing theme of your civilization will change. This is Russia’s theme after reaching the Atomic era, and is one of the best examples of the dynamic soundtrack in my opinion.
I didn’t know it at the time, but hours and hours of exposure to this theme during car rides would implant within me an innate appreciation for what video game music specifically tries to do, and the limitations it tries to do it within....
A track from Stellaris that really captures the feeling of exploring the cosmos. One of my favorites from this game.

The combat music for the Sprawl region of Darkest Dungeon II, the best one in my opinion. The linked track is extracted directly from the game, having different mixes for varying circumstances (read: as your party starts dying and the light starts burning down, it gets more dire).
Wasteland 3 has like, 3 choir pieces in the game, and all of them are way too fucking sick and atmospheric. Battle Hymn of the Republic is the best by far.
