Not FOSS, but Garmin did well in Mozilla’s Privacy not included reviews: …mozilla.org/…/garmin-forerunner-series/

Check comparability. Has an Android app.

I’m unfamiliar with a proper fitness app, that’s privacy respecting. There is the Waistline app, which is a calorie/nutritional tracker, but it’s not really a fitness app.

A quick search brought up Paseo. Not sure how accurate it is, especially compared to a proper hardware tracker, but it should do the job.

Paseo uses the health features of the phone which works fine. Unfortunately it doesn’t support watches. But the accuracy is still pretty good in my experience
