Awesome. I bookmarked this post, so I will check back occasionally and let you know anything I discover while playing.
There are many alternatives to Discord, like Telegram and Element / Matrix. I would imagine the latter would be the best option as far as privacy respecting, non corporate entities go while still being a near 1 to 1 experience. Feel free to correct me, anyone who knows more about this though.
