My sister and I, who agree on little, have arrived at a consensus that macaroni and cheese is overrated and pretty meh. Sorry to those this might affect.

The problem is that no one, well very few, know how to make proper macaroni and cheese which is made in an oven with long macaron milk and cheese (various are used) baked en casserole.
In the US it's even troublesome to find proper macaron to do so.
The yellow processed cheese product slime on little elbow things is just a sad approximation of the real thing.
@nrmacdonald Once you find the right mix of cheeses (and it's going to vary for everyone) it's golden. Cheddar and monterey jack works very well and the heated leftovers may be even better than first cooked.
