Homemade Yumm Bowl with Seasoned Sauteed Spinach
Here in Oregon we have Cafe Yumm, which makes rice and bean bowls with a truly addictive sauce. You can buy the sauce, which I wouldn't say is cheap ($17.99 at WinCo for the bottle pictured), but lasts a long time depending on how you use it.
The ingredients pictured make many bowls:
-Canned black beans (probably cheaper to do dry, but I don't usually take the time to make both rice and beans)
-Canned diced tomatoes (not stewed. I prefer fire-roasted or with herbs or onions)
-brown short-grain rice
-Seasoning mix
-Minced garlic (cheaper to do fresh, but, again, time)
-fresh spinach (or whatever greens to saute)
-Yumm sauce (mayonnaise and chipotle Tabasco sauce mixed could be substituted, or really any sauce you think would be tasty - or none)
This is layered:
-cooked rice
-sauce
-beans
(if cold, this now gets microwaved)
-tomatoes
-warm sauteed spinach with seasoning and garlic (this is usually the only bit that requires cooking at the time you eat it and it takes less than 5 minutes)
It's a flavor explosion - healthy and filling.
