My cooking plan faded

I had grand ambitions, but what with cleaning and grocery shopping and making a salad for lunch, making 4 chia-pudding breakfasts, and getting in some reading (Naomi Novik's In His Majesty's Service), some projects have been pushed to tomorrow. The salad, however, was excellent. 1/4 small red cabbage, chopped 2 big handfuls chopped kale, massaged 1 large yellow bell pepper, chopped…

AND this morning's fasting blood glucose was 5.2 mmol/L (94 mg/dL), a personal best of recent years. No meds, just diet (plus occasional exercise).

But people differ, and I seem to have a mild version of type 2 diabetes that responds to a whole-food non-animal diet + modest meal sizes + intermittent fasting (my eating window is around 9 hours each day, so fasting 15 consecutive hours daily).

@Leisureguy All forms of diabetes are improved by that diet - pre-diabetes (perhaps that's yours?), diabetes types 1 and 2, gestational and arguably type 3 (Altzheimers). jThis diet increases insulin sensitivity which is why it affects (in a good way) all diabetics. It's a great way to be actually in 'control' of your health, for so many more health conditions too including the number one killer, heart disease (and cancer)!

@EllieK Re: the whole-food non-animal diet — I not only avoid animal-derived foods, refined foods, and ultra-processed foods, I got out of my way to eat a variety of foods — Greger's Daily (Baker's) Dozen and Heber's color palette help, and I work a lot of antioxidants into my meals — for example, the ingredients of the Oat-Groat Snack Bars https://leisureguy.ca/2023/11/04/oat-snacks/ include not only intact whole-grain oats but ingredients very high in antioxidants.

BTW, for those less adventurous (or just starting out on a healthy plant diet), a cookbook that I got a few years ago that I highly recommend is Dr. Greger's "How Not to Die" cookbook. I first got it cheap in digital format, then found it to be so good that I bought the hard copy. It includes spice blends, shopping tips and even sample menus for 14 days and all are healthy and based around the Daily Dozen.
It's a great gift to one's self or friends.
